I’ve been doing a lot of work travel to New York City lately which means I’ve been trying plenty of NYC Vegan food and loosening my belt a few notches. I decided, while Morgan is away on a weekend trip down in St. Louis, that I would hijack this week’s Friday Top Five and bring you my favorite Vegan foods found in The Big Apple. Happy Friday! Meatloaf Face Off – Made just for you, Mom

She taught us kitchen basics, how to (and not to) put on makeup, and pretty much every thing else that matters in life. She is our mom. And lucky for Susan and I, we each have two. Susan’s mom made me pancakes and bacon on Saturday mornings while forts were made and cartoons were watched. She always had amazing cookies, pies and muffins in the oven, which I had no will power to refuse. My mom (and dad), took us on vacations and was always there to pick up unnecessary, but totally necessary, items from William Sonoma and surprise Susan and I with the kitchen gadgets and goodies. She also made us delicious meals and our first ever margaritas. Read more

Vegan Meatloaf

Meatloaf & Ketchup, so unappetizing sounding, doesn’t look that great, but it sure reminds me of my mom and our homemade dinners. My mother used to whip up one excellent meatloaf for the family – minimal ingredients, yet all the flavor you needed. Smother it with ketchup, serve it up with a starch and a veggie and dinner was on. Read more

Mom’s Turkey Meatloaf

While everyone else is making pretty flower arrangements and brunch items to honor their moms, we are making meatloaf. It seemed like the right thing to do. Both of us  have fond recollections of eating this from our childhood, and wanted to do something in honor of Mother’s Day…so, here we are, talking about meatloaf. Read more

There will be lost of celebrating going on around Chicago, and everywhere else I would imagine, but these are some of our favorite things inspired by this weekends festivities… Read more

Vegan Power Bars

One day at work my friend Maureen IMed me and said “I made a Susan friendly recipe.” Of course I was intrigued. She proceeded to bring me a a homemade bar that looked like a date bar, yet tasted like a cookie; it was delicious. She emailed me the recipe and mainly because I could not locate Coconut Butter at the store I decided to make a few adjustments to her version and came up with what I am calling Vegan Power Bars.
